Singapore Mei Fun, a stir-fried rice noodle (vermicelli) dish with proteins like egg, chicken, shrimp, etc., is one of my favorites. I usually get it from the local restaurant, and sometimes from food carts.

I really like the blend of savory and spice, with a hint of curry.
Up until now, I thought this was a Singaporean dish, but it’s actually from Hong Kong. I learn something new every day. Next, I’ll have to find an authentic noodle dish from Singapore.
