Noodles Around the World #1 – Italy

After all these years of talking about it, I’m finally doing it — I’m going to prove that noodles unite us. Starting with one of my favorites, Italian!

I love Italian food so much. As a kid, I only knew of pizza. Typical, right? But in my late 20’s, I jumped into cooking lessons, easing my way in with Italian recipes.

Spaghetti is one of my favorite comfort foods, plus it’s quick and easy to make on a weekday. I usually have a few jars of sauce in the cupboard, but if I’m up for it, I might make a batch of tomato sauce or pesto from scratch. I haven’t had much luck with cream-based sauces, but I won’t give up.

I once tried to make a vodka sauce, leading to one of my first kitchen disasters. In hindsight, I should have removed the flame, added the vodka, return to a low heat, and then reduce the sauce. Instead, I added the vodka while the sauce boiled. Bad idea.

Fun Fact: There are around 350 types of pasta.

How many have you tried?

I have no idea where I’m going with this, or what I’ll uncover, but it’s a fun experiment. Let’s see how many noodle dishes I can dig up. Dig in? Sorry, I’ll stop now.
